They are also particularly popular in Southern cooking in America as well as further south in the Caribbean for making meals. Pork neck bones have some meat on them. Cook them low and slow for 2-½ - 3 hours and you’ll not only impart some delicious flavor into whatever you cook them with (beans, collards, potatoes, etc), but you’ll also have some tender pork meat to enjoy. Serve some rice or grits alongside and drizzle some of the meat drippings on top. Pork bones offer an affordable way to bring rich meat flavor to the table.
