Our grass-fed and finished tri tip is a tender, lean beef cut that gets the name from its triangular shape which is cut from the bottom tip of the sirloin. It’s also known as a California cut or Santa Maria Steak, as it was popularized in the Santa Maria Valley on the central coast of California. Grass-fed and flavorful, the Tri Tip is a great cut for marinades and dry rubs, though it’s also delicious on its own. For best results, cook it high heat until the internal temp reaches 125 - 230 degrees. (Be sure not to overcook it!) Let it rest for 5-10 minutes before serving and slice it across the grain for extra tenderness.
