Simple Keto Breakfast - Chorizo & Eggs

Having delicious, quick, and easy meals as we begin the new year is a great way to ensure success on the keto diet. One meal to have on rotation is Chorizo & Eggs-- it’s as simple to make as it is delicious! It’s full of protein, bright colors, and is a crowd pleaser.


What You'll Need

1 lb Grass Roots Pork Chorizo

6 Eggs

½ Medium Onion, Chopped

½ Bunch Cilantro Chopped

1 Avocado Sliced

Shredded Monterey Jack cheese (optional)

Grape Tomatoes (optional)

Pickled Red Onions (optional)

The Recipe

  1. Heat avocado oil in a pan. Once the oil’s hot, add the onions. Stir until translucent. Add pork chorizo and cook until oil renders from the meat. Move the chorizo to one side of the pan, leaving only the empty half of the pan on the heat.

  2. Crack eggs into the empty side and scramble with the rendered fat. Add more oil if necessary. Add salt and pepper to taste. If some chorizo mixes into the eggs-- perfect, the variety of bites makes this dish fun! Alternatively, you can mix everything together as well. Top eggs with cheese and remove from heat.

  3. Top with grape tomatoes, avocado slices, and cilantro. Serve straight out of your pan! Serve alongside your favorite salsa and keto-friendly tortillas or eat as-is!
