The pork chop is a great cut of meat. When properly prepared, it can be incredibly juicy and flavorful. It can also be dry if not prepared and cooked to perfection.

The first secret to this recipe is a salty, sweet brine that will bring additional moisture into the meat. Brining the meat for at least six hours will create a juicy finished product.

The other secret is to use a meat thermometer to make sure you don’t over cook the meat. Pork chops are considered well done at 145 degrees. Pork is not a meat that should be eaten if it is not well done. This scares many people and they then tend to over cook the meat to be on the “safe side.” A meat thermometer will help you make sure that the meat is cooked to perfection.

This recipe is loosely based on a favorite family recipe and has the spiciness of the mustard and the sweetness of the maple syrup. It is sure to be a crowd pleaser.


Serves 4 to 6
Prep Time: 8 to 10 hours
Cook Time: 15 minutes

Brine Ingredients:

  • 2 cups water
  • 4 tablespoons kosher salt
  • 2 cups apple cider
  • 1 lemon, sliced
  • stems of fresh herbs


Brine Instructions:

  1. Combine all of the above ingredients in a small pot and bring to a boil. Turn of the heat and allow the brine to cool in the fridge for about an hour.
  2. Pour the marinade into a large bowl. Add ice if needed to cool the brine. Add the pork chops and place the entire bowl into the fridge. Brine at least 6 hours.
  3. Just before cooking, remove the pork chops from the brine, rinse and pat dry.

Pork Chop Ingredients:

  • 6 medium pork chops
  • 1/4 cup stone ground mustard
  • 1/4 cup real maple syrup
  • 1 clove of garlic, grated
  • 1 shallot, chopped
  • 1 teaspoon fresh time
  • salt and pepper to taste
  • 1 tablespoon sunflower oil

Pork Chop Instructions:

  1. Combine all the ingredients in a large bowl. Add the rinsed pork chops and return them to the fridge for about an hour.
  2. Preheat your grill or a grill pan.
  3. Grill your pork chops for about five to six minutes on each side. When the pork chops have reached an internal temperature of 135 degrees, remove them from the grill and allow them to rest for about 10 minutes. The pork chops will continue to cook to 145 degrees.
