If you want a crowd pleaser, grill chicken thighs instead of chicken breasts. They are the ground chuck to the ground sirloin. Packed full of fatty pockets that make for heat-sputtering basting of deliciousness, start grilling chicken thighs. They are truly one of the tastiest cuts of poultry.

Now that you have stepped up your grilling game, take it to the next level. Instead of reaching for a bottle of the nearest barbecue sauce, why not try something a little different basted on everyday common ingredient that you most likely already have in your refrigerator? Follow the steps below and then call your closest friends and family. It’s time for dinner!

Prep time: 20 minutes + marinade time
Cook time: about 35 minutes on the grill

Ingredients and Instructions

Step 1. Wash and pat dry six bone-in chicken thighs.

Step 2. In a small bowl, mix 2 tablespoons Dijon mustard, 2 tablespoons extra-virgin olive oil, 2 teaspoons balsamic vinegar, 2 minced garlic cloves, ½ teaspoon sea salt, ¼ teaspoon black pepper, and 1 tablespoon dried thyme. Stir together and coat the chicken pieces. If you are making this ahead of time, by all means marinade them in a zipper storage bag.

Step 3. Preheat your grill on medium high heat. This is a messy mustard sauce, so be sure to make sure your grill grates are nice and lubed with oil. Grill skin side up for 20 minutes, flip and grill for approximately 15 additional minutes. Temperature of poultry should be 165 degrees. Remove from heat and let rest in loosely tented aluminum foil.

Step 4. Now, you are ready to plate your grilled chicken thighs with mustard sauce with your side dishes. Have a great dinner!
