Griddled Ham and Cheese

The griddled ham and cheese is a simple dish for a quick comfort food fix. There are only a few ingredients involved in this preparation so the quality of all of the components is very important. We recommend a good thick cut country white bread or your favorite bread, dijonnaise, pimento cheese and our sliced ham. A few of your favorite pickles won’t hurt either.
Pimento cheese comes first - simple to make and delicious in flavor.
What You’ll Need
½ pound sharp cheddar, grated
2 oz cream cheese
¼ cup Blue Plate or Duke’s Mayo
½ cup fine diced roasted peppers or pimentos
1 teaspoon smoked or sweet paprika
1 tablespoon pickle juice
Salt and fresh cracked pepper to taste
The Recipe

Mix all ingredients in a bowl and refrigerate. This can be made a couple of days ahead of time. It is better if it sits for 24 hours.

Now that the pimento cheese is made, it’s time to assemble the perfect hot ham and cheese sandwich.
What You’ll Need
1 pound thick sliced smoked ham
8 slices of your favorite bread
½ cup dijonnaise(½ and ½ mayo and dijon mustard)
1 cup pimento cheese
½ cup pickles
4 tablespoons butter, softened
The Recipe

Preheat a griddle or cast iron skillet on medium heat.

Cook the ham in the skillet for about a minute on both sides.

Build the sandwiches so that there is a layer of ham on either side, with the pimento cheese and pickles in the middle.

Spread the softened butter on the outer layer of bread and griddle both sides until golden brown and the cheese melts.
