Griddled Ham and Cheese

The griddled ham and cheese is a simple dish for a quick comfort food fix. There are only a few ingredients involved in this preparation so the quality of all of the components is very important.

We recommend a good thick cut country white bread or your favorite bread, dijonnaise, pimento cheese and our sliced ham. A few of your favorite pickles won’t hurt either.

Ingredients

Slices of your favorite bread

Dijonnaise (1/2 and 1/2 mayo and dijon mustard)
1/2 cup
Pickles
1/2 cup
Butter, softened
4 Tbsp
Pimento cheese
1 cup
-To Make Pimento Cheese:
Sharp cheddar, grated
1/2 lb
Cream cheese
8 oz
Mayonnaise
1/4 cup
Fine diced roasted peppers or pimentos
1/2 cup
Smoked or sweet paprika
1 tsp
Pickle juice
1 Tbsp
Salt and fresh cracked pepper to taste

Utensils

  • Bowl
  • Griddle or cast iron skillet

Instructions

Mix all Pimento cheese ingredients in a bowl and refrigerate. This can be made a couple of days ahead of time. It is better if it sits for 24 hours.

Preheat a griddle or cast iron skillet on medium heat.

Cook the ham in the skillet for about a minute on both sides.

Build the sandwiches so that there is a layer of ham on either side, with the pimento cheese and pickles in the middle.

Spread the softened butter on the outer layer of bread and griddle both sides until golden brown and the cheese melts.
