AVOCADO CHICKEN SALAD
It’s picnic season. Time to gather a couple of blankets, a basket, and stock it full of easily portable foods and drinks. Let’s be honest, sandwiches are probably the go-to when it comes to selecting a picnic meal, and we’re going to zest up the regular sandwich fare with an avocado chicken salad recipe.
The first step is changing out the mayonnaise for avocado. Nothing against those who prefer a smear of mayo on their own sandwich, but it has never appealed to me, and might not for you.
Avocado is filled with nutrients, and a small serving on a sandwich is all that’s needed for some health benefits. Two tablespoons of avocado contains roughly half to two-thirds the amount of calories in two tablespoons of mayonnaise. The avocado also has less saturated fat and contains healthier monounsaturated fats.
If you scroll down and glance at the ingredients listed for this particular avocado chicken salad, you may be surprised to find lime Greek yogurt as an ingredient. While my original intentions were to create a chicken salad using avocado and plain Greek yogurt as a substitute for the mayonnaise, life threw a curveball while I was at work in the kitchen: the only yogurt in my fridge was lime Greek yogurt.
Would the lime Greek yogurt be a reasonable and, more importantly, palatable substitute for plain Greek yogurt in my chicken salad recipe? There was only one way to find out.
I have never shied away from experimenting in the kitchen when it comes to switching up ingredients and this is just a prime example of why you should try your own substitutions depending on what you may have on hand every once in a while. And so, the lime Greek yogurt became an ingredient in this experimental chicken salad recipe. The results? An even better picnic-perfect chicken salad than I had hoped for. Trust me, give the lime Greek yogurt a try. I hope this recipe encourages you to become more of a recipe scientist in your own kitchen.

AVOCADO CHICKEN SALAD
Prep time: 30 minutes.
- 1 pound of chicken, cooked and diced or shredded
- 1/2 large avocado, removed from skin
- ¼ cup lime Greek yogurt (Chobani brand used for this recipe)
- ½ lime, squeezed
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- In medium bowl, mash the avocado until smooth. Add in the lime Greek yogurt, juice from ½ lime, garlic powder, onion powder, salt, and pepper. Mix until smooth.
- Toss the chicken in the bowl with other ingredients and mix well. Serve on sliced bread or in a wrap with freshly sliced tomato.
